Chorizo Stuffed Bacon Wrapped Medjool Dates

We feature several cakes, cookies and other softer style recipes. With the Super Bowl coming up you might be looking something for the guys during the big game. These bacon wrapped medjool date filled with Chorizo is a simple and quick appetizer if you are looking for some savory & sweet options.

Ingredients:
15 Pitted Medjool Dates - we recommend using smaller size medjools such as fancy or even convection dates. This gives a good balance to the appetizer. Too big of date they become overpowering and may be too sweet.
1/4 cup of Maple Syrup
1/2 pd of chorizo
8 slices of bacon

Preheat oven to 400 degrees

Start by pitting the dates cutting them length wise, be sure not to cut all the way through the date. Make 15 evenly sized pieces with the Chorizo. Stuff each date with the chorizo and close until the chorizo starts to squeeze out of the date. Next, slice 8 pieces of bacon in half. Wrap each date with the bacon and secure with a toothpick. Place the wrapped bacon medjools on a wax-paper lined cookie sheet. Cook in the oven 6-8 minutes then flip and cook for another 6-8 minutes. After each date has a nice cook, then take your maple syrup and brush each side of the stuffed date. Place back into the oven and cook until the bacon is crispy and the date is nice and sticky. Serve hot in halves or wholes depending on your preference.
