Chocolate Chip Medjool Date Cake

Here is a cake that will highlight two of my favorite treats...medjool dates and chocolate. It's a no frosting cake as we feel too much chocolate will take away from the sweet taste of the dates. This does have a nice rise to it so we recommend a a deeper pan. I used a slim pound cake pan for this blog post and it came out perfect. You can also top it with some walnuts and gives it a crunchier texture.


1/2 cup of chocolate chips
1/2 tsp. Salt
1 Tbsp. Cocoa
1 3/4 cups of flour
1 tsp. Vanilla
2 eggs
1 cup of shortening
1 cup of Sugar - for added date flavor we recommend using date sugar
1 cup of hot Water
1 tsp. Soda
And most of all...1 cup of chopped pitted Medjool Dates

Preheat oven for 350 degrees

Combine the soda, hot water and medjool dates in a small bowl and set aside. Cream sugar and shortening together then add the vanilla and egg. Next you will want to sift the cocoa, salt and flour together. Add this mixed ingredient to the creamed mixture alternating with date mixture. Once you have a good mix you will want to top with chocolate chips. This is the point if you want to add nuts you can, we did not. Place in oven at 350 degrees and bake for 40 minutes.
