Date Filled Oatmeal Cookies

A creative way to bake with medjools is adding to an already simple recipe. Thousands of oatmeal cookies are cooked everyday, and what better way to add a little twisted goodness to them by using dates. For this recipe we will be using a medjool cream filling.

Preheat oven to 375 degrees:

Cookie Ingredients:
1 tsp. soda flour
3/4 cup of sour milk
2 1/2 cup of flour
2 cups of oartmeal
1 cup of butter
1 cup of brown sugar ( for more added date flavor use date sugar)

Medjool Date Filling:
8 oz of chopped medjool dates
1 cup of brown sugar
1 cup of water

Cook filling until a thick consistency. Cream the butter and sugar. Add  eggs and mix well. Add flour and soda with the sour milk and add oatmeal. Flour a cutting board or a cooking board and roll out then cut with cookie cutter or for a more creative look, hand mold. Put one tea spoon of filling on cookie and cover with another a oreo cookie, but better.

Bake at 375 degrees for about 10 to 15 minutes.

Polish with a glass of milk to help with the richness and you are on sweet street.
