Medjool Pecan Bread

Medjool dates are great for making breads. It's not a known fruit to bake with. And not too many people have even tried a slice of medjool pecan bread. This is pretty versatile recipe and can be used to bake just about any bread with any combination of fruit and nuts you can come up with. We tried a peach and walnut that was very delicious. If you do happen to get a little adventurous and try some other variety...let us know how it works out. We would love to post pictures of your creations. 

1 cup finely chopped pecans
4 cups sifted flour
3/4 cup of brown sugar
3 teaspoons of baking soda
1 teaspoon baking powder
4 eggs
2 teaspoons of salt
2 cups of boiling water
1 1/2 cups of dates quatered

In a bowl combine quartered dates, soda and water. Let stand 15 minutes. In another bowl combine butter, salt and sugar. Beat in eggs vigorously until a smooth batter is formed. Fold in date mixture. In a separate bowl combine flour and baking powder. Add to medjool-flour mixture blending thoroughly. Blend in nuts...1/4 cup at a time. Pour batter into a greased bread pan. Let stand 15 minutes. Bake at 325 degrees for 1 1/2 hour until brown. Use a toothpick to check for doneness. Remove pan to a rack. Let stand 5 minutes. Invert pan onto a breadboard or platter. Cut into 1;inch thick slices. Serve plain or top with peach ice cream. One batch will make 1 loaf of Medjool pacan bread.
