A really easy and simple cake recipe with all the goodness that sweet medjool dates provide. Good for potluck or holiday party. Since not everyone has eaten medjool dates, it really does start up a conversation.
1 tsp soda
1 cup date sugar
1 cup of boiling hot water
1/2 cup of pecans - chopped (or nuts of your choice)
1/4 tsp of salt
1 1/2 cups of sifted flour
1 teaspoon of vanilla
1/2 cup of mixed butter and shortening
1/2 pound of chopped dates
Cream butter, shortening and date powder until light. Combine dates with boiling water and let set until room temperature. Mix egg and vanilla and beat well. Sift flour, soda and salt together; add to creamed mixture alternately with medjool water mixture, beating after each addition. Mix in pecans while stirring. Lightly flour and grease a baking pan (13X10X2) and bake at 350 degrees for about 25 to 30 minutes. Add whip cream as desired.
