Who does not love a good Date nut bread? We are right in the middle of the Holidays, so I thought I would share with you a recipe that we had in the archives. It's been a while since I have have tasted this one, so thinking sometime this week I will see if the wife and I should have a date cooking night.
1 1/4 cups of medjool dates- roughly 9oz, pitted and cut into large chunks
2tsp of baking soda
2 cups of sifted flour
1tsp of salt
1/2 cup of chopped nuts(of your choice)
1 cup of packed brown sugar
2tbsp of your favorite shortening
1 cup of boiling hot water
Preheat oven to 350 degrees. Pour the hot water over the baking dates and baking soda; let cool. Sift the flour with the salt. Pour in your chopped nuts. Cream the shortening with brown sugar in a large mix bowl. Blend the 2 egg and beat well. Add dry ingredients to creamy mixture alternately to the medjool dates, begin with the dry ingredients and be sure to end with the dry ingredients. Be sure to blend well after each addition. Lightly coat the bottom of a 9 X 5 X 3-inch pan; pour in the batter. Bake at a temp of 350 degrees for 60 to 70 minutes. When done baking, remove from the pan and let cool.
And that is it. A simple nice date bread that will have your mouth watering while reading. I know mine was just typing this up. We do mention the medjools, but feel free to experiment from other dates. We like the sweetness the medjools five this date bread.
