Date Pinwheel Cookies

Date pinwheel cookies are always a favorite dessert to enjoy with some hot coffee on a cold day. These date pinwheels are also a favorite during Ramadan which is coming up here in the next several months. There are two main components of this cookie recipe...the dough and the date filling. This recipe will make 16 pinwheel cookies.

Ingredients:

Filling:

1 cup of date sugar
2 1/4 cups of Pitted Medjool Dates
1 cup of water

Dough:

1 cup of softened butter
2 cups of date sugar
1/2 tsp. of all natural vanilla extract
3 eggs
4 cups of flour
1/4 tsp. of baking soda
1/2 tsp. of salt

Directions:

In a large bowl you will need to cream the butter and the date sugar until it's nice and light. You want a fluffy consistency. Then combine the vanilla and eggs, beat until mixed. Add flour, baking soda and salt. Continue to mix into the creamed mixture until all the ingredients are infused. Place into the refrigerator.

Set stove on low heat and place the medjool dates and date sugar into a pan with the cup of water. You will want to bring the mix to a slow boil then reduce the heat. Keep cooking the date filling down until it thickens. This should take no longer then 13 minutes.

Take your dough our of the refrigerator and cut into four even portions. Roll-out each section of dough into a rectangle. Once you have four evenly shaped rectangles, place each piece of dough in between two pieces of waxed paper. Place back into the refrigerator for 20 minutes.

Remove the wax paper from the dough. Spread your date filling onto the dough. You will want to make sure you fully cover the dough with the date paste. Then roll each rectangle up into a nicely tight roll, continue until each piece of dough is filled with the date filling. Wrap each one with saran wrap and place back into the refrigerator for 2 1/2 hours.

Preheat oven to 350 degrees.

Once the dough rolls are firm cut into 4 even slices. You should have a total of 16 date pinwheel cookies. Grease a baking pan and place the date cookies onto the pan. Make sure to spread evenly and take into consideration them expanding. Place into the oven at 350 degrees for 12 minutes, or until done.
